Bright, Bold, and Better-for-You Aioli!

Making your own aioli from scratch is easier than you might think! It transforms a handful of simple ingredients into a silky, flavorful sauce that feels both indulgent and fresh. This Spicy Citrus Aioli strikes that perfect balance—zesty, slightly spicy, and rich—while also bringing along some surprising nutritional benefits.

The star ingredients here are the Organic Extra Virgin Olive Oil from Oliva Dorado, and the Hot Habanero Hot Sauce from Cloud23. Both are staples in our kitchen! Before we dive into this recipe, I’d like to thank my amazing chef husband, Ryan, who cooked the delicious Sea Bream and asparagus dish pictured above. He also helped me create the aioli recipe. Keep reading to learn how to make this at home! Enjoy!

INGREDIENTS

  • 1 egg yolk — quality matters here! aim for local, pasture raised eggs, bonus points if you can find a farm that offers corn and soy free

  • 2 pinches of high quality salt — I love Vera Salt, use code KELLEY for 10% off

  • zest from an organic lemon

  • 1-2 teaspoons of freshly squeezed lemon juice

  • 1 tablespoon organic Dijon mustard

  • 1 organic garlic clove, grated — a microplane is a great tool to grate your garlic extra fine

  • 1-2 tablespoons of organic hot sauce — I love Cloud23’s Hot Habanero, which is what I used in this recipe, I don’t have a discount code but you can find it at Whole Foods

  • 1 cup of organic extra virgin olive oil — Oliva Dorado! Use code KELLEY15 for 15% off your entire order

DIRECTIONS

  1. Start the base
    In a medium bowl, add:

    • 1 egg yolk

    • 2 pinches of salt

    • lemon zest

    • lemon juice

    • hot sauce

    • dijon

    • grated garlic

Whisk until smooth and slightly thickened.

  2. Emulsify with Olive Oil
Begin adding the olive oil very slowly (a few drops at first), whisking constantly.

    • As the mixture thickens, you can increase to a thin, steady stream.

    • Continue whisking until all 1 cup of extra virgin olive oil is incorporated.

  3. Adjust and finish

    • Taste and adjust salt or lemon juice as needed

TIPS

  • Remember to go slow with the olive oil at the beginning to prevent the aioli from breaking.

  • If it does break, start with a fresh egg yolk in a new bowl and slowly whisk the broken mixture into it.

  • Use fresh lemon juice for the best flavor.

  • Keep in an airtight glass jar or container in fridge for up to 3 days

Now let’s break down what makes this recipe not just delicious, but worth feeling good about….

EGG YOLK

The foundation of any classic aioli, egg yolk is what gives the sauce its creamy texture. It’s naturally rich in healthy fats and contains essential nutrients like choline, which supports brain health and metabolism. I find that I feel my best when I prioritize local, pasture raised eggs that are free from corn and soy, meaning the chickens aren’t being fed a highly processed feed.

OLIVE OIL

Using high-quality extra virgin olive oil is key here. It’s packed with heart-healthy monounsaturated fats, polyphenols, and antioxidants that can help reduce inflammation and support cardiovascular health. It’s also highly supportive to the gut. This is where richness meets nourishment.

LEMON ZEST + JUICE

Fresh lemon brings brightness to the aioli. Beyond flavor, lemons are high in vitamin C, which supports immune health and helps your body absorb iron more efficiently.

DIJON MUSTARD

A spoonful of Dijon mustard adds depth and a subtle tang. Mustard seeds contain compounds that may support digestion and metabolism, while also helping stabilize the emulsion.

GRATED GARLIC
Fresh garlic is the soul of aioli. Grating it allows the oils and compounds to fully release, creating a bold, savory depth. Garlic is well known for its potential immune-boosting and anti-inflammatory properties, and may also support heart health.

ORGANIC HOT SAUCE

A touch of hot sauce gives the aioli a gentle kick. Many hot sauces contain capsaicin, which has been linked to boosting metabolism and adding anti-inflammatory benefits. I love the hot sauces from Cloud23 because they’re not only 100% organic, but the balance of flavor is incredible. They offer a Hot Habanero for those who like a little spicier of a sauce, and also a Sweet Jalapeño. Both are delicious, but my personal favorite is Hot Habanero.

SALT

Salt enhances flavor and helps balance the acidity and richness of the sauce, and also contains important trace minerals. I love Vera Salt because it’s 100% microplastic free and full of beneficial minerals our bodies need.

The Magic of Emulsification

Whisking oil slowly into the egg yolk creates a stable emulsion—the key to that luscious, creamy texture. It’s a simple technique, but it feels like kitchen alchemy every time it comes together.

What to Pair It With

This aioli is incredibly versatile. Its bright acidity and creamy texture make it the perfect companion to a wide range of dishes….

Grilled Vegetables

Try it with charred grilled asparagus—the smoky flavor of the asparagus pairs beautifully with the citrusy richness of the aioli. Broccolini, leafy greens, or beets are also great options.

Fresh Seafood

It’s especially good with delicate fish like sea bream. A simple grilled or pan-seared sea bream topped with a spoonful of aioli becomes restaurant-quality with minimal effort. Use code KELLEY to enjoy $20 off your Seatopia order! They’re my favorite place to source high quality, sushi grade fish and seafood. 100% microplastic free and mercury safe, confirmed by third-party testing.

Roasted Potatoes

Swap ketchup for this aioli when serving crispy potatoes. The creamy texture and tangy bite elevate even the simplest side dish.

Sandwiches & Wraps

Spread it onto sandwiches or wraps for an instant upgrade—especially with grilled chicken or roasted vegetables.

Dipping Sauce

Use it as a dip for fries, shrimp, or even raw veggies. It’s a crowd-pleaser that feels elevated without being complicated.

A Simple Luxury Worth Making

Homemade aioli is one of those small kitchen rituals that delivers big rewards. With just a bit of patience and a steady whisk, you get a sauce that’s fresher, more flavorful, and more customizable than anything store-bought.
