The Perfect Matcha Latte: Gut-Healthy and Immune Boosting
There’s something grounding about preparing matcha slowly—the sift, the pour, the whisk. The process itself becomes an art form. This version of a matcha latte is designed to be both deeply nourishing and effortlessly enjoyable, combining high-quality ingredients that support energy, digestion, and overall vitality.
Whether you’re easing into your morning or taking a midday pause, this is a simple ritual that offers both function and comfort in every sip. Here’s what you’ll need to make this at home….
Ingredients
• 1–2 tsp high-quality matcha — I love LAKA Matcha! Use code LAKAKELLEY for 10% off!
• 2-3 oz hot filtered or spring water (not boiling)
• 8-12 oz cup milk of choice — I’m a big fan of well sourced raw milk (more on this below)
• 1 tsp raw honey — I love the Lineage Provisions Organic Raw Honey. Use code KELLEY for 15% off
• 1 scoop high quality collagen powder — Lineage Provisions Nose-to-Tail Collagen is my favorite! You can also use code KELLEY to save 15%
• Splash of organic vanilla extract
Directions
1. Sift the matcha through a fine sieve into a bowl to remove any clumps
2. Slowly add hot water to the matcha
3. Whisk using a chasen in a zig-zag motion until smooth, creamy, and lightly foamy
4. Add the honey, collagen, and vanilla extract, continue whisking until fully dissolved
5. Pour the matcha mixture into your milk of choice (I prefer a chilled matcha vs. ice cold to support the spleen and gut…. iced drinks can be too taxing on the digestive system, especially in springtime when we are still awakening from the heaviness of winter foods.)
6. Stir or shake gently and enjoy!
Why These Ingredients Matter
A concentrated form of green tea, matcha is rich in antioxidants that help protect the body from oxidative stress. Its unique combination of caffeine and L-theanine provides a calm, steady energy—supporting focus without the sharp spikes or crashes often associated with coffee.
Collagen adds a subtle boost of nourishment without altering the taste or texture of your drink. It provides key amino acids that support skin, joints, and connective tissue, while also playing a role in maintaining gut lining integrity.
More than just a sweetener, raw honey contains natural enzymes and compounds that support immune health and digestion. It offers a gentle source of energy and blends seamlessly into warm drinks.
I know raw milk is still very controversial but when you dissolve the politics around it, and look into the true data behind high quality, lab-tested milk, it’s truly one of the healthiest foods available. My husband and I live in Virginia currently, and have been a part of Creambrook Farms Herdshare for several years now. We have never once gotten sick from their raw milk. If you’re curious about trying raw milk, I highly recommend checking out the Raw Milk Institute, and finding a farm near you who is certified through RMI. They specialize in raw milk education and safety to ensure truly nutritious and safe raw milk!
Now on to the benefits…. Raw milk offers a uniquely whole-food form of nourishment, with its structure largely intact. It provides a complete protein source—containing all essential amino acids—in a form that many find easier to digest due to its natural enzyme content. Unlike ultra-processed dairy, raw milk still contains active enzymes such as lactase (which helps break down lactose), lipase (for fat digestion), and phosphatase. These enzymes can support digestion and may make raw milk feel more tolerable for some individuals compared to conventional milk.
It also contains naturally occurring beneficial bacteria (probiotics) when sourced from healthy, well-raised animals. These microbes can support gut diversity and overall digestive health when the milk is fresh and handled properly. In addition, raw milk is rich in fat-soluble vitamins like A, D, and K2, along with bioavailable calcium and phosphorus for bone health. Its natural fats help slow the absorption of caffeine from matcha, creating a more stable, sustained energy curve.
Let me know if you end up making this at home!!
