High Protein & Fiber Chia Seed Pudding Recipe

Chia Seed Pudding is one of my favorite snacks to prep in the beginning of the week as a quick grab and go breakfast option, or post workout protein pickup.

This specific recipe features a blend of Coconut Water hydrated Chia Seed Pudding, topped with Greek Yogurt infused with Raw Honey, Ceylon Cinnamon and Protein Powder. The measurements in this recipe will yield about 10-12 small jars (4-6oz each), or 5-7 medium or large jars. They’ll stay at their maximum freshness in airtight glass jar containers for 7 days!

Ingredients:

• 1 ¼ cup Organic Chia Seeds

• 4 cups of Organic Unsweetened Coconut Water

• 2-3 tablespoons of Organic Heirloom Cacao, or Organic Carob Powder if you’re not a cacao person, *optional

• 32oz to 48oz of Full Fat Greek Yogurt, amount used is depending on if you like more yogurt vs. more chia seed mixture

Organic Raw Honey (I use Lineage Provisions!)

• 1-3 teaspoons of Organic Ceylon Cinnamon

Protein Powder, *optional (I use Lineage Provisions AB Complete, which features 20g of Animal Based Protein per scoop!)

• Unsweetened Organic Coconut Flakes, toasted with Ceylon Cinnamon, *optional

Directions:

PART ONE: Prepare Chia Seed Mixture

• In a large glass mixing bowl, add your Unsweetened Coconut Water, then whisk in a teaspoon or two of Ceylon Cinnamon as well as a few tablespoons of the Heirloom Cacao or Carob Powder if you’d like. Once that is well combined, add your Chia Seeds in, stirring slowly for about 1-3mins until the mixture becomes uniform and gelatinous. Cover the mixture and store in fridge for at least 6 hours to set, or overnight if you prefer.

PART TWO: Prepare the Greek Yogurt Mixture

• In a large glass mixing bowl combine your Full Fat Greek Yogurt with a few tablespoons of Raw Honey (measure to taste — I like mine less sweet so I usually only use about 2 tablespoons). I also like to add in another teaspoon or two of more Ceylon Cinnamon, and last, you also have the option to mix in a couple scoops of protein powder. Once well combined, pop that in the fridge and get ready to layer your mixtures into your jars.

PART THREE: Add to Jars

• I like to layer the hydrated Chia Seed mixture at the bottom. I typically fill the jars at least half way with the Chia Seeds, then add the yogurt mixture on top. Be sure to leave some room at the top for your lids to fully close.

• I also love to toast up some Unsweetened Coconut Flakes and toss them in a dusting of Ceylon Cinnamon then keep them in a separate jar and add them fresh. If you add them on top then store them, the coconut flakes lose their crunch.
